Just like many of our other habits, our food preparation and eating habits change during the summer. From fresh fruit and cold salads to steaks and veggies on the grill, we prepare foods differently when it?s warm outside, so now is the right time to remind yourself of proper food storage and preparation to reduce the risk of food-related illness.
Purchasing and Preparation
? Inspect fruits and vegetables before purchasing for bruising and damage
? Pre-wash produce and salad mixes before serving
? Store food at the proper temperature
? Store fruits and vegetables in a different drawer in the fridge away from raw meat and seafood
Tools of the Trade
? Wash your hands thoroughly before handling any food
? Before using, thoroughly wash countertops, cutting boards, knives and other utensils used in food preparation
Cooking
Follow guidelines to make sure all foods are completely cooked and considered fully-cooked:
? Poultry: 165 degrees
? Ground beef, pork, lamb and veal: 160 degrees
? Beef, pork, lamb and veal chops or steaks: 145 degrees
? Fish: 145 degrees
As a general practice, keep cold foods cold and hot foods hot. After everyone has served themselves, put cold items back into the cooler or fridge and store any cooked foods back in the cooler or fridge as soon as possible, preferably within an hour after serving.
With these simple and easy precautions, you can ensure your summer meals are safe for everyone.
