Fire up the Grill
Set aside the traditional summer grilling staples in favor of an avocado masterpiece. The heat warms and softens the flesh, and the flavor imparted by the smoky grill takes it over the top. For a simple grilled side, drizzle lemon juice and olive oil over a halved and pitted avocado, and then sprinkle with salt and pepper. Place on the upper grill rack for a few minutes, removing once grill marks have formed. For best results, use a firmer, rather than fully ripe, avocado.

Toss this flavorful dressing with two pounds boiled, small red potatoes and chopped green onions and celery.

What better way to leverage the creamy richness of the avocado than in homemade ice cream? Avocados bring nutrients like fiber, potassium and healthy fats to an otherwise indulgent dessert.
